Bikini Recipe
Yields 10 people
Ingredients for the Citrus Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar
For the Drink (produces 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (as made above)
Fresh cranberries, for garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Combine the listed items inside a saucepan, bring to a gentle boil, agitating so the sugar melts. After that, remove from the heat allowing it to reach room temperature entirely. Pour to a sealable bottle, cap it and refrigerate it in the fridge, it will last for around one month.
Preparing the Premix: Combine the specified spirits and syrup in a sizeable container, leave to sit for an hour, then pass it through , ideally through a fine cloth, so it's perfectly clear.
When ready to serve: Pour 85ml from the premix into a stirring glass containing ice, and agitate carefully for about 60 seconds to chill. Pour into a cold coupe glass or similar, decorate with the cranberries and finish by giving it a brief mist of the essential oil over the top.
